Roasted Vegetables with Whole Wheat Orzo and Goat Cheese!

sounds like a great recipe to use up all the garden veggies!

Congratulations to Peggy Lunde for her Roasted Vegetables with Whole Wheat Orzo and Goat Cheese!
1 yellow, red or orange pepper, cubed
¾ pound zucchini, cut into thick diagonal slices (about 3)Salt and pepper to taste
1 red onion, cut into 8 wedges
1-2 Tablespoons olive oil
1 cup whole wheat orzo
1 cup fresh basil
2 medium tomatoes cut in...to wedges
1-2 Tablespoon Balsamic vinegar
4 ounces goat cheese (i would use a different cheese I think)

Preheatoven to 425. Toss the peppers, zucchini, and onion with the oil in alarge bowl. Add salt and pepper. Roast on a baking sheet until tenderand starting to brown, about 40 min. tossing halfway through. Whilethe vegetables are roasting, boil the orzo until just cooked, about 7-9minutes. Drain. Toss the orzo with the roasted vegetables, tomatoes,basil, and goat cheese. Drizzle with the vinegar. Serves 4
