Sweet Potato Souffle

1 16 oz. can sweet potatoes mashed (or about 2 or so sweet potatoes cooked and mashed)
2 eggs, beaten
3/4 cup sugar
1/2 tsp. cinnamon
1/4 tsp. nutmeg (I omit)
1/2 cup milk

Mix the above ingredients, put it in 8x8 casserole dish, and bake at 350 for 20 minutes.

Meanwhile, mix the following:
1/4 cup brown sugar
1/2 cup crushed pecans
1 1/2 cups corn flakes1/4 cup butter.
Mix and place on top of sweet potato mixture after it has baked for 20 minutes. Bake for an additional 15 minutes.

You could double to 9x13 pan as well.

hmmmmmm I will have to try the cornflake thingy on top.. It does sound yummy!

yes cassie. i should have given you credit! we still remember our tday at your house fondly. wow, both of us with one baby boy each!

i had to go hunt down the recipe b/c i told some girls about it this weekend!
