3 c. raw diced zucchini (2-3 zucchini bought in store because they are skinny)
1 sm. onion, diced OR leeks OR scallions (whatever I have on hand)
1 c. Bisquick
4 eggs
1/3 c. oil
1/4 tsp. salt and pepper
1 tsp. parsley (I use a heavy tsp of Italian seasonings from Pampered Chef instead)
1 c. grated Cheddar cheese or swiss or mozzerella or parmesan (I use a combo of all/whatever I have)

Mix all ingredients together. Put into buttered (I use PAM) pie plate or 8x8 pan. Bake until top is golden, 350 degrees about 35-45 minutes.
