We made one with Hannah last year and nibbled on a little bit of it. We mostly ate the candy. :-) The rest of it ended up in the trash. She had fun putting it together though. The guys had to figure out a way to keep the walls up too, but it didn't work very well.
I should have posted a picture of our attempt at making a house. It was horrible! The whole thing collapsed several times- so bad that the sticky frosting was everywhere. I probably wouldn't have let Griff eat the cookie part though. It's pretty stale and gross.
We used to make them with my sister-in-law and her family...but we always made our own gingerbread fresh (she had the molds from Pampered Chef). So yes we did eat them after a day or so...only I would scrape off the icing as it was always too sicky sweet for me.
